How to properly hold a quail

This is my first hatch. I have 8 5-week-old Cortunix. I handled them a lot, but they still are very flighty and hard to get a hold of. Now that they are bigger, I am having trouble getting a hold of them. Since I want to start sexing them next week (they will be old enough then I think) so that I can separate them into two different groups (it seems to me the cage I have them in is getting a bit "tight" in the space department) I want to be able to handle them correctly to vent sex them. I have one that is real sweet and lets me hold him (or her?) but not well enough to turn upside down and lift up the tail to look. Pictures would be helpful.

Holding hand size quail it easy enough, if you restrain their wings you can hold them in just about any position without them causing too much fuss.
